Chickpea Curry with Turnips


Ingredients:

     Olive oil
½  Onion, diced
2  Cloves minced garlic
1 Tbsp ground cumin
2 Tbsp curry powder
1 (15oz) Can garbanzo beans, undrained
1 Red bell pepper, diced
2 Small turnips (or 1 large), peeled and diced
1 Cup corn kernels
1 (15oz) Can diced, fire roasted tomatoes
1 Pinch crushed red pepper flakes
1 Pinch salt
1 Pinch cracked black pepper


Directions:

1. Heat the olive oil in a saucepan. Add the onion, garlic, cumin, and curry powder and cook until onion is translucent and soft. 

2. Add all ingredients to the slow cooker and heat on low, about 6 hours.

Optional: Pour over baked sweet potatoes or basmati rice.
